White Chocolate Sand Dollars
So what does a person do when they are short on ideas, low on candy, and craving sweets? Invent their own recipe, of course! And I have to admit, this couldn’t be much easier. It took a matter of minutes to make, a short amount of time to set and then suddenly I had a delicious little snack.
I decided to call these yummies White Chocolate Sand Dollars because, call me crazy, but they look a little like sand dollars (assuming you use your imagination a bit, of course). You can vary the ingredients depending on what you like and what you have on hand. Mine turned out to be almost like white-chocolate-covered trail mix. The only required tools are a microwave-safe bowl, a knife for chopping the “mix-ins”, a spoon, and wax paper or a Silpat mat.
White Chocolate Sand Dollars
8 oz white chocolate chips
1 cup chopped nuts
1 cup dried cranberries, chopped
1/2 cup shredded coconut, toasted
Heat white chocolate in microwave safe bowl, in one minute intervals, until melted, stirring after each minute. When melted, add remaining ingredients and stir until combined. Spoon by tablespoonful onto wax paper or Silpat. Allow chocolate to harden.





They sound divine - thanks for the idea. I would alter just one little thing… replace the white chocolate with bittersweet or dark. Then I’m in! But then I suppose I’d have to change the name to a less cute marine-moniker, sucha as: Tar Deposits Found on the Beach at Low Tide After the Oil Tanker has Cruised By.
