Rocky Road - Not Just Ice Cream


Aside from the basics - chocolate and vanilla - I would guess that rocky road is one of the more popular ice cream flavors. But then again, I’ve never worked in an ice cream shop, and honestly don’t eat all that much ice cream. I do, however, think a chocolate base combined with marshmallows, nuts and more chocolate makes for a killer flavor combination. That’s why I thought “Rocky Road Candy” would be a winner.

Rocky Road Candy After tasting my creation, I had to pat myself on the back for being right. My original batch (which appears in the photograph) needed a bit of tweaking. I didn’t spread the mixture thin enough, which made it difficult to cut after being refrigerated (chilling helps the chocolate harden). And the chocolate to marshmallow and peanut ratio was a bit off. So my revised recipe features more peanuts and marshmallows, and a bigger pan. You can also drop spoonfuls of the mixture onto a wax paper lined baking sheet to save you the cutting step.

Rocky Road Candy

1(12 oz) package semi-sweet chocolate chips
2 cups mini-marshmallows
2 cups peanuts

Melt chocolate chips in microwave using one minute intervals, stirring in between each interval. When almost completely melted, remove from microwave and stir until completely melted and smooth. Mix in peanuts and mini-marshmallows. Spread evenly into foil lined 9×13 baking dish. Refrigerate 2 hours or until chocolate is hardens. Remove candy from foil and cut into squares.
