The Chocolates of Summer
Summer vacations and chocolate are not mutually exclusive. Several candy makers boast that their products are good travelers and some claim their products won’t melt in your hand or your handbag or backpack.

The artisans at ChocolateSmith hand dip dark chocolate ganache pates in multi-colored Dutch cheese wax.
While the resulting wax-covered pates could be mistaken for blocks of gouda cheese, the colorful rind preserves the chocolate for up to two months and makes it waterproof and heat tolerant. These Packer’s Pates, according to ChocolateSmith, have satisfied the chocolate cravings of travelers in jungles, cities and on mountain tops around the world. The company does say if the weather does get hot enough, the chocolate pate will soften, but the wax will protect it and a quick chilling will bring it back to perfection. Packer’s Pate comes in five flavors: dark chocolate; dark chocolate raspberry; dark chocolate peanut butter; orange chili chocolate, and nuts and berries.
The ChocolateSmith store is located in Santa Fe, New Mexico, but the pates are available by mail order.
