Snap, crackle, pop in the summertime!
How would you classify rice krispie treats? They aren’t baked, and contain no flour, so I wouldn’t consider them a cookie. But are they candy? With all that cereal, I’ve never really thought of rice krispie treats as such. I’ve just always kinda lumped them into the “sweet junk food” category. Sometimes the only thing that matters is that we like something, right? Ok, who am I kidding…when it comes down to it, that’s all that really matters: that it tastes good!
As we dive deeper into the season of outdoor grilling, picnics and poolside fun I find myself craving simple yet satisfying sweets that go perfectly with summertime. And what goes better with summer eating than rice krispie treats? And remember last week’s s’mores? Perfect for campouts, cookouts and tailgating fun. Rice krispie treats are about as American as apple pie, so I figured I’d stray from the norm a bit and share a tasty “kicked up” version.
Peanut Butter Rice Krispies Treats
4 cups mini-marshmallows
4 cups rice krispies cereal
4 Tbsp butter
4 Tbsp peanut butter
Generously grease 9 inch square baking dish. Put marshmallows, butter and peanut butter into a microwave safe bowl. Microwave for 2 minutes, stir, microwave 1 additional minute, then check to see if all ingredients are melted; if not continue microwaving in 30 second increments until completely melted. Remove from microwave and add rice krispies. Stir until completely combined. Pour mixture into greased pan and spread out evenly. Allow to set and cool. Cut into squares & enjoy!
